{"id":763,"date":"2013-03-09T10:01:30","date_gmt":"2013-03-09T14:01:30","guid":{"rendered":"http:\/\/dennisdanvers.com\/?p=763"},"modified":"2013-03-09T10:01:30","modified_gmt":"2013-03-09T14:01:30","slug":"grace-under-pressure-a-vegan-single-pot-meal","status":"publish","type":"post","link":"http:\/\/dennisdanvers.com\/?p=763","title":{"rendered":"Grace Under Pressure:  A Vegan Single-Pot meal."},"content":{"rendered":"<p><strong>Grace Under Pressure:\u00c2\u00a0 A Vegan Single-Pot meal.<\/strong><\/p>\n<p>Soak 1 pound dry beans 8 hours or so, any kind of beans\u00e2\u20ac\u201dchickpeas, pintos, black, red, cranberry, great northern, navy, etc.\u00c2\u00a0 Rinse and put in pressure cooker.\u00c2\u00a0 I use a 4-Qt. stainless steel Presto.\u00c2\u00a0 If you love beans, a pressure cooker will save hours of your cooking life.<\/p>\n<p>Add a 15 oz. can of cooked diced tomatoes, juice included.\u00c2\u00a0 I use no-salt organic Muir Glen.\u00c2\u00a0 You may use Rotel or similar or add your own diced peppers.\u00c2\u00a0 I use a lot of jalape\u00c3\u00b1os and roasted red peppers.<\/p>\n<p>Add three cups liquid.\u00c2\u00a0 This can be water, broth, a mix of water with some soymilk or coffee or fruit juice or whatever suits your beans and spices and imagination.\u00c2\u00a0 A little low-sodium tamari, liquid smoke, your favorite hot sauce.<\/p>\n<p>Add spices.\u00c2\u00a0 Go ahead.\u00c2\u00a0 Stir them in.\u00c2\u00a0 You can use chili powders, curry powders, etc.\u00c2\u00a0 2+ tablespoons to taste.\u00c2\u00a0 You&#8217;ll have the chance to adjust the spices.<\/p>\n<p>Add crushed cloves of garlic, lemon zest, fresh ginger, etc.<\/p>\n<p>Chop up 12-16 ounces of greens\u00e2\u20ac\u201dspinach, collard, kale\u00e2\u20ac\u201dor use a bag of frozen (no thawing necessary).\u00c2\u00a0 Pack the chopped greens on top of the bean and liquid mixture.<\/p>\n<p>Peel and cut an onion (I prefer red, but any kind is fine) and cut it into eighths, so that you make onion &#8220;shingles&#8221; to lay over the top of everything.\u00c2\u00a0 The arrangement is important because it keeps anything from flying up and blocking the vents on the pressure cooker.<\/p>\n<p>Bring to pressure and allow to cook for 18 minutes, and let pressure fall of its own accord.<\/p>\n<p>When you open the pressure cooker, adjust liquid and spices, cooking a little to allow to thicken.\u00c2\u00a0 Serve with brown rice or quinoa or by itself.<\/p>\n<p>If the beans aren&#8217;t cooked after 18 minutes, close it up and cook a few more minutes.\u00c2\u00a0 Time and liquid amounts can vary with equipment and beans, etc.<\/p>\n<p>It&#8217;s even better the second day.\u00c2\u00a0 Divine on the third.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Grace Under Pressure:\u00c2\u00a0 A Vegan Single-Pot meal.
